I held out as long as I could. I really did. I had to make meatloaf for our “Food from the Heartland” month. It is the ultimate comfort food to me on a cold winter evening and one of my favorite meals, usually with mashed potatoes and green beans—the perfect combination. This time I decided, instead of making a whole meatloaf, I would make mini loaves. They turned out great and just enough for each person to have their own.
Preheat oven to 350ºF.
In a large bowl combine beef, bread crumbs, onion, salt, black pepper, and 2 tablespoons of the tomato sauce. Mix well to combine all the ingredients.
Divide the mixture evenly between 2 mini loaf pans. Drizzle the remaining 2 tablespoons of tomato sauce evenly over the 2 loaves. Place the pans on a cookie sheet and place in a 350ºF oven and bake for 35 minutes.
Serves 2.
