This is comfort food at its finest – I grew up with my mom making this with mashed potatoes and peas for dinner. This is not your normal meat loaf!
Combine ground beef, bread, lemon juice, onion, egg and seasoned salt. Mix well and place in loaf pan. You will either want to use very lean beef or use a loaf pan that has a drain on it so the fat can drain. Or let it sit in its fat – it may not be the healthiest option, but it’s oh so good!
Bake for 15 minutes at 425 degrees.
Meanwhile, in a small bowl, combine the remaining ingredients except for lemon. Slice the lemon into very thin slices.
At 15 minutes, cover meat loaf with the sauce and top with lemon slices. Bake for an additional 45 minutes at 350 degrees.
Leftovers are great as a meat loaf sandwich the next day!
