A savory beef pie filled with sirloin tips, carrots and peas. Killian’s Red beer adds a superb full flavour to the gravy. All topped with rustic red mashed potatoes and a generous sprinkling of cheddar cheese melted on top.
1. Start potatoes by adding them to water, enough to just cover potatoes, boiling until soft. Mash with a little potato water, butter, salt and pepper to taste. Add a little milk if you like for a creamier mashed potato.
2.Trim any fat from sirloin steak, cut into 1″ cubes.
3. Mix half the salt and pepper with flour, enough to thoroughly coat cubes of meat.
4. Add olive oil to a heavy pan, heat on medium-high and cook batches of flour-coated meat in oil, browning on all sides. Flip meat constantly, as it will stick and get thick in the pan.Cook meat cubes 10 minutes . If it gets too thick and sticky, add a little water.
5. Remove all the meat. turn heat to medium. Add chopped onions, carrots and saute in the gravy mixture until carrots are crisp-tender. Add the frozen peas. Let them warm in the gravy.
6. Add the meat cubes back into the pan with the vegetables and gravy mix. Add the bay leaves, thyme, remaining salt and pepper. Now pour the bottle of Killian’s into the pan. Continue stirring to mix all the ingredients together and allow to simmer for about 10 minutes.
7. Pour all the contents of the pan into a 11 x 13 ” casserole dish.
8. Top the entire mixture with the mashed potatoes. Sprinkle shredded cheese on top evenly.
9. Bake at 350ºF for about 30 minutes or until cheese melts and slightly browns.
Serve with warm fresh biscuits!
