This is my family’s favorite meatloaf recipe!
Preheat oven to 350 degrees.
Heat olive oil in skillet. Add onions, thyme, salt & pepper. Cook over medium low heat, stirring occasionally, for 8-10 minutes until onions are translucent, not brown. Take off heat, add Worcestershire sauce, chicken broth and tomato paste. Allow to cool slightly.
In a large bowl, combine ground chuck, onion mixture, bread crumbs and eggs; mix lightly with a fork. Don’t mash or the meatloaf will become dense. Divide into 6 portions and shape each portion into a small loaf on a sheet pan. Spread about 1 Tablespoon of ketchup on top of each loaf.
Bake 40-45 minutes until internal temp is 155-160 degrees. Serve hot.
