I know it’s easier to go to the deli and buy roast beef, but this is quite delicious and you can use it like deli roast beef in any of your recipes.
The size of the top round london broil is approximate; you can go bigger or smaller.
Mince the garlic cloves and add them to the oil and red wine. Mix together. Add salt and pepper (you can also season the meat with the salt and pepper to your taste). Pour the mixture over the meat and let marinate overnight, making sure all the meat touches the liquid (I find using a bag is best). Remove the meat from the marinade (throw the marinade away) and sear it in a pan, making sure to brown the outside very quickly. Then place the meat in a 300F oven and roast for 20 minutes. Remove and let it rest before slicing ever so thin (you need a really sharp knife and slice as thinly as you can).
Store in a tight covered container and use as needed. In my house it does not last more than a week, so I can’t say how long you can store it.
