An old German classic. This is my tried-and-true mother-in-law’s recipe and one of my fiancé’s favorite dishes! Make it with the meat of your choice!
Preheat oven to 350 degrees.
Escalopes must be nice and thin.
Salt and pepper the meat.
Cook the escalopes in a pan on both sides, but not till they’re completely done.
Take them out and put tomato slices on each escalope; top them with cheese slices. How much tomato and cheese slices you’ll need depends on how big your escalopes are.
Arrange them in a baking dish and put it in the oven for about 10 minutes, or until cheese is nicely melted.
In the meantime, fry each egg sunny side up.
Take the escalopes out of the oven and top each piece with a fried egg.
Serve along with a green salad and French fries. At least, that’s how we serve it, tradition and so on.
