This is a sure hit, every time! The spice rub gives it a fabulous kick of flavor! This is meat I serve every Christmas. You can’t go wrong!
Trim beef tenderloin.
Combine dry ingredients. Rub tenderloin with oil, then coat with spice mixture. Place in roasting pan and chill for 8 hours, covered.
Bake at 500 for 15 minutes, until browned. Lower temperature to 375, and bake for 20 minutes more (until it is done to your liking).
Let it stand for 10 minutes. Slice, and serve with horseradish mayo.

Made this for Christmas dinner, and the family loved it! My roast must’ve been a little thicker, because it took about an hour for it to cook to medium. Oh well, that’s why we have meat thermometers!
That being said, the flavor was outstanding, the meat was fork-tender and completely delicious!
