Description

The first year we were married, I brought this to my husband’s extended family Christmas celebration. I have been required to bring it every year since (this will be #20!). The original recipe calls for bacon, but I’m a vegetarian so have always left it out and I always use vegetarian baked beans. I also usually double the recipe in my 5-quart crock pot.

Ingredients

  • ½ cups Apple Cider Vinegar
  • 1 cup Brown Sugar
  • ½ teaspoons Garlic Powder
  • 1 Tablespoon Chili Powder
  • ½ teaspoons Dry Mustard
  • 1 teaspoon Salt
  • 1 Tablespoon Red Pepper Flakes (optional)
  • 1 whole Large Onion, Diced
  • 1 can (15 Oz. Can) Lima Beans
  • 1 can (15 Oz. Can) Kidney Beans
  • 1 can (15 Oz. Can) Butter Beans
  • 1 can (28 Oz. Can) Baked Beans
  • 8 slices Bacon, Cooked (optional)

Preparation

Simmer vinegar, brown sugar, garlic powder, chili powder, dry mustard, salt, chili flakes (if using) and onion together over medium heat for about 20 minutes.

While this mixture is simmering, drain and rinse lima, kidney and butter beans. I usually use whatever beans I have on hand, and have successfully used pinto, cannelini, great northern, etc.

Put all drained beans into a crock pot. Add baked beans, vinegar mixture and crumbled bacon, if using. Cook on low for 3 hours. You can also bake this in the oven at 350 degrees F for one hour if you don’t have a crock pot.

These beans are great. I made them for Christmas and they were a nice change from my usual baked beans. I left the red pepper flakes out, but other than that made it as directed.
