Flavourful beef stew, perfect for a cool fall day or winter. You could even put this in your crock pot and have a wonderful meal later in the day.
*Total cook time includes all the steps and minutes.
Cut meat into bite-sized pieces, and dredge with about half of the flour. Brown all over in hot oil. Remove pieces as they brown, and set aside.
Add onion, garlic, and parsley to drippings and stir for 3 minutes. Stir in remaining flour. Gradually add beef broth, and Worcestershire sauce. Stir over medium heat until mixture slightly thickens.
Add meat, stirring as it heats up to boiling. Reduce temperature to low. Cover, and simmer for at least 2 hours.
At this point, add the cubed potatoes and carrot chunks. Cover, and cook on low for another 20 or so minutes. It will come to a boil, but just watch it carefully.
Stir in frozen peas; cover and simmer for just 5 minutes.
Serve in separate bowls with fresh bread.
