This grilled steak is fantastic with roasted cherry tomatoes!
To prepare marinade, combine olive oil, vinegar, garlic, herbes and salt in a ziplock bag. Add steak and marinate for 2 hours.
Preheat oven to 400ºF. On a foil-lined baking sheet, lay out tomatoes in a single layer. Drizzle olive oil over tomatoes. Sprinkle garlic, salt and pepper over olive oil. Roast in oven for 20 minutes.
While tomatoes are in the oven, pre heat a grill. Remove steak from marinade, discard marinade. Grill steak for about 5-6 minutes each side depending on desired degree of doneness and thickness of your steak. Let rest for about 10 minutes.
Top steak with tomatoes and blue cheese crumbles.
