So simple to make, but full of flavor.
Preheat oven to 500 degrees.
In a small bowl, combine the salt, garlic salt, and pepper.
Wipe off the roast with a wet paper towel. Rub seasoning into the roast and brown in a pan (make sure the pan you use is okay to place in an oven and has a lid!) over medium heat.
Put the pan with the lid on top in the oven for 20 minutes. Do NOT open the oven door. Once the twenty minutes are over, turn the oven off and leave it in without opening for 12 hours. Once the 12 hours are up, you may refrigerate it till ready to serve and reheat in the oven on a low temperature covered in foil.
(The size of the roast is up to you—the smaller the roast, the less seasoning you use!)
