These are so juicy, and so easy. They are even requested by my super picky husband!
Slice onion into thin half-rings. Heat butter in a medium skillet over medium heat. Once butter is melted, add onions. Stir periodically while you cook the burger patties, and cook them until they become soft and carmelized.
Form ground beef into 4 patties; make them flatter and larger than you think you’ll need, because they’ll shrink! Brown all 4 patties in a separate large skillet on medium-high heat for 2 minutes on each side, or just until each side is brown. Add the beef broth. Cook about 10 minutes until burgers are fully done, flipping after 5 minutes.
Melt cheese on top of the patties. (I like goat cheese, my husband likes mozzarella. If you’re trying to stay true to the French onion idea, go with Swiss.)
Once the cheese is melted, serve the burgers on toasted English muffins, topped with carmelized onions. Pour the extra broth from the pan into individual ramekins for a dipping sauce. Enjoy!
