My uncle shared this recipe with me when I got married. As a confirmed bachelor, he always enjoyed a good quick meal with plenty of leftovers. Now that he’s gone, I still make this often. It brings back great memories!
Brown ground beef and onion in a large skillet. Drain. Add enchilada sauce, soup, and milk. Mix together and bring to a low boil.
Roll tortillas around cheese and olives. Place in the boiling mixture. Spoon mixture over tortillas. Cover and simmer for 8 to 10 mimutes or until cheese is melted.

I was looking for a quick recipe that would help me use up some enchilada sauce I had on hand. This was it, and turned out delicious.
