An instant hit with my family.
1. Heat oven to 350°F. Cook beef and onion in a 10” skillet until browned, stirring often to break up meat. Drain. Stir taco seasoning, soup, beans, and rice in the skillet.
2. Divided beef mixture among tortillas. Roll up and place seam side down into casserole dish. Pour enchilada sauce over tortillas and top with shredded cheese.
3. Bake for 20 minutes or until enchiladas are hot and bubbly.
