I’ve never liked meatloaf. Ever. Until I had this recipe and realized how easy it could be! The salsa adds a little kick and the Stove Top stuffing mix eliminates all the measuring in “traditional” recipes! This is the ultimate comfort food … both served hot as a great dinner or served cold on sandwiches.
Mix salsa, Stove Top stuffing mix, onion and egg together well. Add ground beef/ground turkey and, using very clean hands, moosh (yes, that is a technical kitchen term – LOL) it all up together until well mixed….
Place in a greased/sprayed loaf pan.
Mix together the ketchup and pancake syrup for the topping/glaze. Pour over the top of the formed loaf.
Bake uncovered at 350F for an hour.
Best when served with homemade mashed potatoes and peas….
Also excellent served cold on bread as leftover sandwiches… with a slathering of real mayo. No Miracle Whip, please. We all know MW is from the debbil…
