Description

A delicious and filling shepherd’s pie that’s perfect for feeding your roommates and their hungry boyfriends! Feel free to substitute fresh produce for the canned!

Ingredients

  • 1 pound Lean Ground Beef
  • 1 whole Onion, Chopped
  • 3 cloves Fresh Garlic, Peeled And Minced
  • 2 stalks Celery, Chopped
  • 1 can Carrots, Rinsed And Drained (14.5 Oz)
  • ⅓ cups Canned Tomato Paste
  • 1 can Corn, Rinsed And Drained (14.5 Oz)
  • 1 can Italian Style Green Beans, Rinsed And Drained (14.5 Oz)
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Red Pepper
  • 1 teaspoon Ground Black Pepper
  • ¼ cups Parsley, Chopped

  • FOR THE MASHED POTATOES:
  • 1 box (7.2 Oz. Box) Betty Crocker's Garlic Mashed Potatoes (Use Both Packets)
  • ¼ teaspoons Ground Black Pepper
  • ¼ teaspoons Nutmeg
  • ¼ cups Green Onion, Chopped
  • ¼ cups Cheddar Cheese

Preparation

1. Preheat oven to 350°F.
2. Cook and stir the beef, onion, garlic and celery in a medium skillet over medium-high heat until the beef is lightly browned and the onion is translucent. Drain the meat.
3. Add the carrots, tomato paste, corn, green beans, and seasonings. Simmer for 5 to 10 minutes to blend; mix in parsley.
4. Meanwhile, prepare mashed potatoes according to package directions. Mix in seasoning, green onion and cheese.
5. Transfer beef mixture to a 9×13 casserole dish. Spread the potato mixture evenly over the beef mixture.
6. Bake 15-20 minutes, or until mashed potatoes harden slightly and are barely browned. Let sit for 5 minutes before serving.
7. Feed to hungry friends or family!
