Description

Delicious but simple supper.

Ingredients

  • 1 whole Medium Onion, Diced
  • 4 cloves Garlic, Minced
  • 4 Tablespoons Olive Oil
  • 2 cans (15 Oz. Can) Black Beans
  • 1 can (14.5 Oz. Can) Diced Tomatoes
  • 1 can (11 Oz. Can) Original Ro-Tel
  • ½ teaspoons Salt
  • ½ teaspoons Freshly Ground Pepper
  • 3 cups Rice, Cooked

Preparation

Saute onions in olive oil for 2-3 minutes on medium low heat; add garlic and saute for 2 minutes more. Add the beans, tomatoes, Ro-Tel and salt and pepper. Bring to a boil; reduce heat and simmer for 15 minutes or so. Serve over hot rice.

Quick and easy meal and so flavorful! This will go in our regukar rotation. I topped mine with fresh pico de gallo. Yum!
