Description

Healthy and hearty black bean soup!

Ingredients

  • 1 whole Onion, Medium, Chopped
  • 4 cloves Garlic, Minced
  • 1 Tablespoon Cumin
  • ¼ teaspoons Red Pepper Flakes
  • 2 Tablespoons Canola Oil
  • 3 cans (16 0z. Can) Black Beans, Undrained
  • 1 jar (16 Oz. Jar) Salsa
  • 1 can (14.5 Oz. Can) Low Sodium Chicken Broth
  • 2 Tablespoons Lime Juice

Preparation

Cook onion, garlic, cumin, and red pepper flakes in oil in a 4-quart sauce pan on medium heat, or until onion is tender. Remove from heat.

In a blender or food processor, puree two cans of the beans, with liquid. Stir into saucepan. Stir in remaining beans, salsa, broth, and lime juice. Heat mixture to a boil over medium to medium high heat, stirring frequently. Reduce heat to low and simmer 30 minutes. Adjust seasonings to taste if desired (I added about and extra 1/2 tablespoon cumin and several shakes of cayenne pepper).

This turned out absolutely yummy! I love the flavor when adding the lime juice. This will make for a lovely meal for lunch.

So easy to make. The taste of this will vary greatly, of course, depending on what type and brand of salsa you choose. After taste-testing the soup before serving, I found ours to be “too salsa-y”, and added another can of black beans. It turned out beautifully! Served with sour cream and shredded cheese, even my pickiest eater allowed that “it tasted pretty good”. We will be making this again!
