Great meatloaf that I, a meatloaf hater, absolutely crave! Can be made with ground beef also, but I like the leanness of bison. Can easily be doubled or tripled, just increase the cooking time.
Preheat oven to 350ºF.
In a bowl, mix by hand the meat, onions, oats, salt, pepper, juice and egg just till well blended. Transfer to a baking dish (I use a 9×13 stoneware pan) and free form into a loaf. In a separate bowl, mix together brown sugar, mustard and ketchup to form a thick paste. Spread mixture on the top and sides of meatloaf. Bake for 1 hour 15 minutes.
Let rest for 10 minutes before cutting into it.
Great served with mashed or parsley potatoes and green beans with onions.

I have some ground bison in my freezer and now I have a new recipe to try! I’m thankful that it is gluten and dairy free since I can’t eat foods made with either of those ingredients. Thank you for posting this!
