Easy to put together and delicious to make. Leftovers can be made into stew or sandwiches, too.
With paring knife, poke holes in roast. Stuff holes with garlic pieces. Place Roast in crockpot.
Pour in beef broth, sprinkle french onion dip mix over top of roast. Separate onion into pieces and lay on top of roast. Cook on high 8 hours on low or 6 hours on high.
Halfway through cooking time, add carrots and green beans to crockpot. When roast is finished cooking, use cooking juices to make gravy by thickening with flour.
Serve with mashed potatoes and fresh baked bread or rolls.
