I never realized how much I channel memories of my mother through my cooking until Kim and I started our beloved blog Out A Thyme. I have such happy memories in the kitchen so I guess it only makes sense.
In the 70s, after my mom made us a delicious dinner, my sister and I were responsible for cleaning the kitchen. We would sing “One Tin Soldier” from the movie Billy Jack, at the top of our lungs!
Preheat oven to 375ºF.
Finely chop bell pepper and onion. In a large bowl, combine ground beef, bread crumbs, egg, bell pepper, onion, garlic salt and pepper. I usually use my hands; you want to handle it delicately, don’t handle it too much. Form into a loaf and make a valley on top with the side of your hand. Place in a loaf pan. Put in the oven at 375ºF for 15 minutes then add half the chili sauce on top. Return to the oven and cook for the remaining 45 minutes. In the meantime, make the gravy. Place the can of tomato soup in a sauce pan with the remaining half of the chili sauce and the water. When the meatloaf is done, allow to rest for a few minutes before cutting. Then cut off the end of the meatloaf and crumble in the gravy.
Serve with mashed potatoes.
