Description

This is a slow cooker recipe for the Filipino dish Asado. Beef is slow cooked in tomato sauce with green bell peppers, carrots, potatoes, and Manzanilla olives.

Ingredients

  • FOR THE SAUCE:
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1-½ Tablespoon Soy Sauce
  • 8 ounces, fluid Organic Tomato Sauce
  • 3 whole Bay Leaves
  • 1 teaspoon Whole Black Peppercorns
  • 1 whole White Onion, Diced Large
  • 3 cloves Garlic, Smashed
  • FOR THE STEW:
  • ½ pounds Beef, Sliced Into 1 In. Cubes
  • 1 whole Green Pepper, Sliced Lengthwise
  • 3 whole Potatoes, Cut Into Quarters
  • ¼ cups Carrots, Cut Into 1" Chunks
  • ¼ cups Manzanilla Olives (seedless)

Preparation

1. Add all the ingredients for the sauce in the slow cooker. Add the beef. Add water as needed, making sure you just cover the meat. More liquid will be released from cooking the meat and vegetables, so you don’t want to add too much water. Set the slow cooker on low. Cook for 4 hours.

2. After 4 hours, add the remaining ingredients into the crockpot. Stir a bit with a spoon. Keep the slow cooker on low for 4 more hours.

3. After 4 hours, the dish is done. Meat should be tender and soft. Serve over rice!
