An easy, classic meat curry with a secret spice mix that makes it irresistible.
1. In a dry pan or pot over medium heat, dry roast the whole coriander and cumin until they start to smell toasty. Then put them into a spice grinder and grind. Set aside.
2. In a heavy-bottomed pan add all the other ingredients except the water and the spice mixture.
3. Cover the pan and cook over medium heat until the liquid from the beef almost dries up, stirring occasionally. This should take about 30-35 minutes depending on meat quality.
4. Once the beef is cooked and tender, add the dry roasted powdered spices.
5. Stir for 8-10 minutes adding the water in stages, as needed to create a gravy.
6. Turn off stove once gravy boils and thickens.
