Description

I found this recipe in a magazine back when my kids were little. This quickly became our favorite go-to dinner on nights when we were short on time. The kids still ask for these often, and I haven’t found anyone who doesn’t enjoy these easy-to-make treats!

Ingredients

  • 1 pound Lean Ground Beef
  • 1 teaspoon Onion Powder
  • Salt And Pepper, to taste
  • 1 cup Bottled BBQ Sauce (we Use Sweet Baby Rays)
  • 1 package (about 16 Oz.) Pillsbury Grands Buttermilk Biscuits (Not The Little Biscuits—The BIG Ones!)
  • ½ cups Shredded Cheddar Cheese

Preparation

Preheat oven to the temperature indicated on the package of biscuits.

Brown and crumble the ground beef in a skillet until completely cooked. Drain off fat if necessary. Season the cooked ground beef with salt, pepper, and onion powder. Remove from heat and stir in the BBQ sauce.

Open the package of biscuits and flatten each biscuit out. Spray a muffin pan with cooking spray to prevent sticking. Press each biscuit into a muffin pan, making biscuit cups. Spoon 2 to 3 tablespoons of the ground beef into each biscuit cup. (If you use Pillsbury brand biscuits, there will be eight biscuit cups, and four empty spots in your muffin pan. I put a little bit of water in each of the empty spots to prevent the pan from scorching.)

Put the filled muffin pan in the oven and bake for about 15 minutes or until the biscuits are cooked and golden brown on the sides. Remove from the oven and sprinkle the shredded cheese on top of each biscuit. Put the muffin pan back in the oven for another 3 to 5 minutes until the cheese is melted. Serve immediately.

Makes 4-6 servings.

I have made variations of these depending upon my mood, but the kids and my hubby still like the BBQ version best. Some the variations I have tried are to add diced tomatoes, Italian seasoning, and parmesan cheese to the ground beef instead of the BBQ sauce for an Italian version (I really like this one!), or add taco seasoning and olives to the ground beef instead of the BBQ sauce for a Mexican version. Use your imagination. I don’t think you can go wrong with these pop’ems!

My mom always made these when we were kids.. she used to let us press the biscuits in the muffin tins, all i can say is yum!

My sister in law made these for our family one night a few months ago. I was skeptical at first but they were really good. Even the picky eater in my family loved them.
