Description

The ingredients of this Mexican casserole are so simple, but the flavors of the end result are so complex!

Ingredients

  • 1 pound Hamburger, Seasoned With Salt And Pepper
  • 1 cup Chunky Picante Sauce, You Decide The Heat
  • 15 ounces, weight Can Of Sweet Corn, Drained
  • ½ cups Miracle Whip
  • ¼ cups Sour Cream
  • ½ teaspoons Chili Powder, Or To Taste, You Decide The Heat Level!
  • 2 cups Shredded Taco Cheese
  • 2 cups Crushed Tortilla Chips

Preparation

Preheat oven to 350 F.

Brown beef in a skillet over medium heat. When done, drain off the grease. Stir in picante sauce, drained corn, Miracle Whip, sour cream and chili powder to taste.

In a 2-quart casserole dish, layer one half of the beef mixture, then 1 cup cheese and 1 cup chips. Repeat layers.

Bake at 350 F for 20 minutes.

Serve with guacamole, taco sauce, sour cream, lettuce, tomato, whatever you like!

We really liked this dish! For us, it was a bit too heavy on the Miracle Whip (my husband usually hates Miracle Whip unless it’s mixed in with other things, and it was a little too much for him), so next time I’ll change the proportions just slightly. I added garlic powder and cumin along with the chili powder, because we also like tons of spice, and I used baked tortilla chips. Thanks for sharing! I’ll be making this one again!
