Ground Beef and Mushroom Tacos
Prepare all the veggies before you begin assembling this dish….
In a large skillet add 2 Tablespoons of olive oil at medium high heat. Add the ground beef, half the onion, and the jalapenos, then season with salt and pepper. Cook until the meat is fully cooked then remove from heat and drain grease if necessary.
In a large bowl mix the following ingredients for the avocado salad (which will top the tacos, like a salsa)! Cube the avocado, add the other half of the onion and the lime juice. Salt and Pepper to taste. Mix and set aside!
In another skillet, add the last Tablespoon of oil, the sliced mushrooms and the sliced garlic over medium heat. Once this has had a chance to cook for a few minutes, add this to the ground beef skillet and combine everything.
Heat the corn tortillas one of two ways:
In the microwave wrapped in a damp towel for 45 seconds on high.

Remove the beef from the skillet, gently wipe the skillet clean and place the tortillas in the skillet over medium low heat until just warmed (pliable).
*If you don’t like soft shelled tacos, feel free to use hard shell. My family likes to use both. Just place your hard shells in the oven at 350 degrees F for just a few minutes until warmed! Refer to the package instructions for timing.
Then you are ready to assemble the taco! Place the beef in the taco shell and top with the avocado salad on top and ENJOY! It’s simple and delicious, fun for the whole family!
