A really tasty Irish stew!
Place beef in bowl and toss with oil.
Combine Flour, Salt, Pepper and few dashes (to taste) Cayenne powder.
Dip the beef in seasoned flour.
Brown in a large pot with about 1 tbsp of real butter – no fake stuff!
Remove and set aside.
Add chopped onions and saute for 2-3 minutes.
Add in all other veggies and saute another 2-3 minutes.
Add beef back to pot.
Add in beef stock and Guinness.
Add handful of barley and sprigs of thyme.
Bring to the boil, turn heat down to low and simmer for 1 and 1/2 hours.
Season to taste with some salt and a little black pepper.
Remove thyme sprigs (the leaves will have fallen off and will stay in the stew, this is perfect).
Serve with good old fashioned mashed potatoes.

Making this one tonight, with the Dilly Rolls…. I’m going to add more barley and maybe thicken the liquid a bit at the end. Thank you!

Delicious I made it last night with potato instead of turnip and it was a winner.
The warm french baguette with butter didn’t hurt either

This stew was delicious! More soupy than stew-y but could easily be thickened with a bit of roux or adding more barley to soak up the liquid. I served it over egg noodles and the whole family left clean bowls!
I was surprised at how little we tasted the Guinness. It had more of a rich beefy flavor. Overall, it was delicious and will probably become a staple in our house.
