Great beef dish for that special occasion!
Preheat oven to 350 F. Note that a large roasting pan with a grate inside will work the best for this standing beef rib roast.
Coat the entire standing rib roast (using a brush) with olive oil. Then add salt and black pepper, to coat the roast. Place standing rib roast onto the grate inside roasting pan and add beef stock and quartered onions around the bottom. Cover with foil and bake for 60 minutes (depending on your preference—the cooking times will vary based on your desired level of done-ness).
Remove pan from oven. Let roast rest for 10 minutes. Remove cooking string and place on a large serving platter.
This is delicious with creamy mashed potatoes or baked potatoes and a green vegetable! Enjoy!
