Meatloaf haters beware—this WILL convert you! These muffins are also a fun way to hide vegetables in your children’s food. Don’t worry, it will be our little secret.
Preheat oven to 375 degrees.
Cook bacon until soft over medium heat to render the fat.
Add bell pepper, onion, mushrooms, and garlic. Saute until soft. Set aside to cool completely.
Once vegetables are cooled, combine ground beef, vegetable and bacon mixture, cheddar cheese, oatmeal, 1/4 cup brown sugar, 1/4 cup mustard, and 1/4 cup ketchup. Mix thoroughly.
Portion meat mixture into 12 even portions in a traditional muffin pan. These should be around 1/4 cup portions depending on your pan.
Bake meatloaf “muffins” for 30 minutes.
While the “muffins” bake, combine the remaining 1/4 cup brown sugar, 1/4 cup mustard, and 1/4 cup ketchup. Whisk until mostly smooth. This makes your topping.
After the “muffins” have baked for 30 minutes, remove from the oven. Spoon 1 teaspoon of topping over each “muffin” and spread over the top to cover completely.
Place “muffins” back into oven for 10 minutes. Serve immediately and enjoy the sounds of “YUM!”

Kind of thought it strange there was no egg…then I went to her site…recipe there calls for one egg.
