Description

These are the best meatballs! My aunt would bring these to family reunions and they never lasted long. My mother-in-law always request them for family events. They are great with pasta or by themselves.

Ingredients

  • FOR THE MEATBALLS:
  • 3 pounds Ground Beef
  • 1 Tablespoon Chopped Green Bell Pepper
  • ½ cups Evaporated Milk
  • 1 Tablespoon Chili Powder
  • 1 teaspoon Salt
  • ¼ cups Cornmeal
  • 2 Tablespoons Finely Chopped Onion
  • 1 whole Egg
  • 1-½ teaspoon Dry Mustard
  • Dash Pepper
  • FOR THE SAUCE:
  • Flour, As Needed For Coating Meatballs
  • Oil, As Needed For Frying
  • 1 package (about 1 1/2 Oz. Size) Spaghetti Sauce Mix
  • 2 cups V 8 Juice

Preparation

Mix together ingredients for meatballs. Roll into balls. I make mine around the size of a golf ball but you can make them whatever size you like. Doesn’t matter.

Put some flour in a bowl and, one at a time, roll meatballs in the flour and shake off any excess flour.

Heat a frying pan with just enough oil to coat the pan. Brown the meatballs but don’t cook them all the way through. Remove meatballs to a paper towel and drain.

Get a large cooking pot. Add meatballs to the pan. Over the top, sprinkle spaghetti sauce mix and add V-8 juice. Let the meatballs cook for about 45 minutes over low heat, stirring occasionally.

This is also a good crockpot meal. Just set to low to medium heat. You can serve this by itself or with your choice of pasta.
