An old family favorite with a low carb makeover. You would never know there are no potatoes in this dish. Ready in just 30 minutes! Suitable for gluten-free, Atkins, keto, lchf, low carb, diabetic, low glycemic, dairy-free.
Melt half of the bacon grease in 12-inch skillet. Add cubed daikon, cover, and cook over medium heat until daikon is fork tender, about 5 minutes, stirring occasionally.
When daikon begins to brown, add onions and stir again. Keep cooking over medium heat until onions begin to brown. Move daikon and onion mixture to outside of the pan.
Add the rest of the bacon grease to the center of the pan. Lay the corned beef slices in the center of the pan to cook. Keep the heat up enough that the corned beef gets crispy on the bottom before flipping the slices. When the second side begins to brown, mix daikon and onions in with the corned beef. Add a little salt and pepper to taste.
When the entire mixture is as browned/crispy as you like it, serve.

Tasty Kitchen defaults to “fluid” whenever you use ounces as a measurement. I forgot to go back and change that to “weight” instead. Just read it as “ounces.”
