This is a recipe handed down my husband’s family that originates from the Amana Colonies in Iowa.
Combine salt, pepper and flour and pound into steak.
Brown steak quickly in hot oil or shortening. Add the vinegar and turn the steak to coat. I add more vinegar as needed to be sure all the meat gets coated before the vinegar cooks dry.
Add the sliced onion and water to cover. Reduce heat and simmer covered 6 – 8 hours or until tender.
Remove meat and thicken juice for gravy.
I make this in an electric skillet, but you could use a dutch oven on the stove top or oven. Just be sure the water doesn’t all boil away.
