Baked nacho goodness! A delicious combo of beef, bean and melted cheese come together to create a perfect family meal.
Preheat over to 350 degrees.
Brown ground beef, drain. Add black beans. Add taco seasoning and 2/3 cup of liquid (take the black bean liquid and add enough water to make 2/3 cup). Cook 10 minutes, stirring occasionally, until liquid has thickened. Remove from heat.
Lightly grease a 13×9 baking dish with cooking spray. Add half of the bag of tortilla chips to the baking dish, spread evenly. Sprinkle half of the can of refried beans, in teaspoon amounts, all over the chips. Sprinkle half of the beef/black bean mixture on chips. Sprinkle half of the cheese on chips.
Repeat steps 6 – 9 with second half of ingredients. The baking dish will be overflowing, so try to pile a little more towards the middle.
Bake nachos for 15 – 20 minutes, or until cheese is melted and refried beans are cooked through. Using a large knife, cut nachos into six equal pieces, serve with any or all optional toppings. Enjoy!

Hi Aimee, Your baked nachos sounds and looks so good, I am adding this recipe to my box right now. We like simple one-dish meals and especially like Mexican dishes. Plus, when you can have several options for add -ons it is certain to satisfy everyone! Thanks for sharing. Will try this very soon.
