The addition of mint extract and green food coloring make this a special St. Patrick’s Day treat!
Mix together sugar, butter, vanilla, egg and milk. In a separate bowl, mix the flour, cocoa, baking soda, baking powder and salt. Gradually add to wet mixture and mix until combined. Drop by tablespoonfuls on a parchment-lined cookie sheet. Bake at 375 degrees for 8-10 minutes.
To make the filling, whip together all ingredients until smooth. Add another teaspoon of milk if the filling is too thick. Spread between two cookies.
