Description

These have the texture of shortbread cookies (super crumbly) and are pretty different from the average chocolate chip cookie, but still delicious! I brought them to a going away party and they were a hit.

Ingredients

  • 1 cup Butter (or Butter Substitute), Softened
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoons Stevia Powder Extract
  • 1-½ cup Whole Wheat Flour
  • ½ cups Unblanched Almond Meal
  • 1 Tablespoon Flaxseed Meal (optional)
  • ¾ teaspoons Salt
  • ¾ teaspoons Baking Powder
  • 1-¼ cup Mini Chocolate Chips

Preparation

1. Preheat oven to 350ºF.
2. Cream the butter until fluffy; then mix in egg, vanilla, and Stevia extract. Set aside.
3. In another bowl, mix flour, almond meal, flax, salt, and baking powder.
4. Combine the two mixtures until blended, then add chocolate chips.
5. Roll into cookie dough balls and place on baking sheets, flattening them out after dropping them onto the sheet.
6. Bake for about 10 minutes!

I was excited about the prospect of a whole-wheat cookie, but these were (perhaps predictably) dry, dry, dry. Not one to waste ingredients, though, I will crumble them and use them in a crumb crust.
