Description

Soft and chewy, with the essence of warm vanilla and bright orange plus slightly tart cranberries and creamy white chocolate. This Christmas cookie has it all with the added bonus of whole grains!

Ingredients

  • ¾ cups White Whole Wheat Flour
  • ¾ cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ⅛ teaspoons Salt
  • ¼ cups Salted Butter
  • ¾ cups Granulated Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • 1  Orange, Juiced
  • 1-½  Oranges, Washed And Zested
  • ½ cups White Chocolate Chips Plus A Few Extra For Garnish If Desired
  • ¼ cups Sweetened Dried Cranberries

Preparation

Preheat oven to 350 F.

In a small bowl, combine the flours, baking soda and salt and set aside.

In a medium sized mixing bowl, cream the butter and sugar before adding the egg, vanilla, orange juice and zest. Beat well. Stir in the flour mixture until combined. Then fold in the white chocolate chips.

Drop by rounded tablespoons onto a greased cookie sheet leaving an inch or two between each. Using about 1.5 tablespoons of dough per cookie gave me 16 cookies. Place 4 dried cranberry pieces on each cookie, arranged like a flower with 1 white chocolate chip in the center.

Bake at 350 F for approximately 8 minutes. Every oven is different so really keep an eye on them around the 7 minute mark. You want them to look slightly underdone since they will finish baking as they cool.

The cookies I made were definitely a decent sized cookie. If you make smaller cookies, keep in mind that the baking time will decrease. This recipe could very easily be doubled or even tripled.

Recipe makes roughly 16 cookies. 1 cookie = 140 calories.
