A soft ginger cookie that gets praised wherever it goes!
Combine dry ingredients in a bowl.
Combine butter, brown sugar, and vanilla in another bowl. Then add the egg and molasses.
Add dry ingredients to wet ingredients. Mix well. Roll dough into 1-inch balls and roll in white sugar. Bake at 340ºF for 9 minutes—no more. They will seem under-baked, but that is what you want. Cool for a few minutes on the cookie sheet before moving to a wire rack.
