Description

A shortbread type cookie with a wonderful almond flavor.

Ingredients

  • 1 cup Butter
  • 1 cup Vegetable Oil
  • 1 cup Sugar
  • 1 cup Confectioners Sugar
  • 2 whole Large Eggs
  • 1-½ teaspoon Almond Extract
  • 1 teaspoon Cream Of Tartar
  • 1 teaspoon Salt
  • 1-½ teaspoon Baking Soda
  • 4-½ cups All-purpose Flour
  • 1 package Toffee Bits, 8 Ounce Bag
  • 2 cups Sliced Almonds

Preparation

Cream butter, oil, sugars, eggs and almond extract until light and fluffy.

In separate bowl, combine cream of tartar, salt, baking soda and flour.

Add the dry ingredients to the creamed butter mixture. Mix in toffee bits and almonds.

Use a small cookie scoop to drop balls of dough onto ungreased cookie sheets. Flatten to about 3/8″ thickness with the palm of your hand.

Bake at 350°F for 10 to 13 minutes. Makes 7 dozen.

These were very good and made a lot. You might want to flatten the cookies a bit before baking them.
