Description

Easiest thing in the world and SO good. Can be made with any flavor of cake mix!

Ingredients

  • FOR COOKIES
  • 1 box Spice Cake Mix
  • 2 Eggs
  • ¾ cups Butter
  • FOR FILLING:
  • 2 Tablespoons Butter
  • 1-⅓ cup Powdered Sugar
  • 4 ounces, weight Cream Cheese

Preparation

The recipe I used originally called for devil’s food cake mix, but I used a spice cake mix instead, ’cause that’s what I had on hand! They were amazing with the spice cake mix, but I imagine any flavor of cake mix you like would work perfectly.

COOKIES:

Add cake mix, eggs, and 3/4 cup (cube and a half) of butter together. (Soften the butter a little first, but don’t melt it. Batter should be pretty thick or they won’t set up right in the oven. Trust me, cookie puddles don’t work as well.)

Bake in the oven at 350 degrees F for 10 minutes. They might not look done, but they are. They’re supposed to be pretty soft. Let them cool completely before adding the filling. (I put mine in the fridge ’cause I was in a hurry, and it worked great for cooling them.)

FILLING:

Mix 2 tbsp. butter, powdered sugar, and cream cheese together to make the filling. Spread on the bottom side of a cookie, then put another cookie on top to make a sandwich!
