There are so many gluten-free cookie recipes out there, but you must be careful! So many of them fall apart as soon as you bite in to them. The trick is to find a recipe that tastes delicious and keeps your cookies ooey-gooey soft for days. It took me many, many attempts to finally discover this recipe, but I can officially announce that my mission has been accomplished.
In a large bowl, mix softened butter, brown sugar, granulated sugar, vanilla and salt.
In a medium bowl, mix flour, xanthan gum, baking powder and baking soda.
Combine mixtures. Add egg and chocolate chips. Mix well.
Round dough into balls and place on baking sheet. Bake at 350ºF for 10 minutes.
