Description

Today I’d like to share my recipe for quick, easy and delicious green cookies. I’ve never celebrated St. Patrick’s Day, but I really wish to. That is why I decided to prepare this charming treat for my family and friends. Please forgive me for not having a three-leaf shamrock cookie cutter…But no matter what the shape, these cookies are scrumptious.

Ingredients

  • FOR THE COOKIES:
  • 1 cup Butter
  • 1 cup Sugar
  • 1 whole Egg
  • 1 Tablespoon Vanilla Extract
  • 3 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 1 Tablespoon Green Food Coloring
  • FOR THE FILLING:
  • 14-⅛ ounces, weight Mascarpone
  • 1-⅞ ounce, weight Sweetened, Condensed Milk
  • 1-⅞ ounce, weight Coconut Cream

Preparation

For the cookies:

1. Preheat oven to 347°F (175°C).

2. Put butter and sugar into the bowl of a food processor and mix to combine.

3. Add egg and vanilla extract and mix to combine.

4. In a separate bowl combine baking powder with flour then add it into the rest of the ingredients. Mix until just combined.

5. Add food coloring and process until just incorporated.

6. Divide dough into workable batches and roll it out on a floured surface until about 1/4 inch thick. Use your preferred shape cookie cutter and cut. Combine dough scraps, roll it out and cut out additional cookies. Place cookies on a parchment lined cookie sheet.

7. Bake in preheated oven for 6-8 minutes. Remove from oven. Let them cool on the cookie sheet.

For the filling and assembly:

1. In a mixing bowl using an electric mixer, combine mascarpone with sweetened condensed milk and coconut cream until creamy.

2. Spread 1.5 teaspoons of filling on the bottom of half of the cookies. Top with remaining cookies.
