Ingredients

  • FOR THE COOKIES:
  • 2 cups All Purpose Fluor
  • 1-⅓ cup Rolled Oats
  • 1-¼ teaspoon Baking Powder
  • 1-½ teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • 1 teaspoon Ginger
  • ¾ cups Brown Sugar
  • ¾ cups White Sugar
  • 2 sticks Unsalted Butter
  • 1 whole Large Egg
  • 1 teaspoon Vanilla Extract
  • 1-¾ cup Canned Pumpkin Puree
  • FOR THE GLAZE:
  • 1-½ cup Powdered Sugar
  • 3 Tablespoons Milk
  • 2 Tablespoons Maple Syrup

Preparation

Preheat oven at 180 C/350 F. Line two baking sheets with baking paper and set aside.

In a medium-sized bowl combine flour, oats, baking powder, cinnamon, nutmeg and ginger. Stir to combine

In a bowl of your electric mixer place sugars and butter. Cream them on low-medium speed then add the egg and vanilla and beat for 5 more minutes. Add half of the dry ingredients and half of the pumpkin puree and mix. Then add the remaining dry ingredients and the remaining pumpkin puree.

Drop tablespoon-sized scoops of dough onto the prepared baking sheets and bake for 12 minutes. When done remove the pans from the oven, allow cookies to set up on the pans for a couple of minutes then move them to a sheet of parchment paper to finish cooling.

To prepare the glaze just combine all the glaze ingredients together in a small bowl and whisk well.

Drizzle glaze on top of cookies and let it dry for about 20 minutes.
