Description

A twist on a classic treat!

Ingredients

  • FOR THE COOKIES:
  • 1 cup Butter, Softened
  • 1-¼ cup Brown Sugar
  • ¼ cups Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • 1-¼ cup Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1-½ cup Oats
  • 1 cup Graham Cracker Crumbs
  • 1 cup Miniature Chocolate Chips
  • FOR THE FILLING:
  • ½ cups Butter, Softened
  • 1-½ cup Powdered Sugar
  • 1 teaspoon Vanilla
  • 7 ounces, weight Jar-Marshmallow Fluff

Preparation

Preheat oven to 325ºF. Line baking sheets and set aside.

In a mixer, combine butter and sugars and beat until creamy. Add eggs one at a time, beating well after each addition. Add vanilla and mix well.

In a separate bowl, combine flour, baking soda and salt. Carefully add flour mixture to butter mixture, beating well. Stir in oats and graham cracker crumbs until blended. Stir in mini chips.

Using a small cookie scoop, scoop up dough and shape roughly into 1-inch balls. Bake for 12 minutes or until edges have set. Let cool on baking sheet for 5 minutes before moving to a cooling rack.

For the filling, beat butter until creamy. Slowly stir in powdered sugar. Add vanilla and marshmallow fluff.

Spread a large spoonful of filling on bottom of one cookie, top with another cookie. Store in refrigerator.

Makes about 24 sandwiches.
