These shortbread cookies are amazing, buttery and simply awesome. I personally love to smear some Nutella between cookies and call it a day. But they are just as yummy plain!
Cream butter and sugar. Add flour, salt and vanilla. At this point, the dough becomes very crumbly. Use your hands to finish mixing it until it becomes a ball. Wrap in plastic wrap, roll into a log shape and refrigerate for about 30 minutes (or longer).
Slice the dough log very thin, about ¼ inch (or less). Bake in a 350 degree F oven for 10-13 minutes until just turning brown on edges. Remove and cool.
Spread Nutella between two cookies, eat and enjoy!

uhhh good thing I just got a Costco-sized jar of nutella… I am definitely making these!
