Description

A warm summertime calls for lots of camping and s’mores! These s’mores cookie sandwiches are crisp, soft, easy to make, and super delicious.

Ingredients

  • FOR THE COOKIES:
  • 1 cup All-purpose Flour
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Sea Salt
  • 6-½ Tablespoons Unsalted Butter, melted
  • ¼ cups Brown Sugar
  • 1  Egg (large)
  • 1 teaspoon Pure Vanilla Extract
  • FOR THE S'MORES FILLING:
  • 2 Tablespoons Butter, Softened
  • 1 cup Chocolate Spread
  • 1 cup Mini Marshmallows

Preparation

For the cookies:
Preheat oven to 325°F. Grease a cookie pan or baking sheet with butter and set aside.

In a small bowl, combine dry ingredients: flour, baking soda and salt. In a separate bowl, combine butter, brown sugar, egg and vanilla and whisk until thick and smooth. Combine butter mixture with dry ingredients until well-mixed and thick.

Evenly distribute cookie batter into 16 dollops onto greased cookie pan or baking sheet. Bake in preheated oven for 12-15 minutes, and remove when edges are crisp and golden. Set aside to cool completely.

For s’mores filling:
In a small saucepan, heat butter on low heat until softened. Add chocolate spread and gently stir until it begins to melt. Add mini marshmallows and keep combining until marshmallows melt into the chocolate spread, creating a swirling pattern.

Remove from heat and add immediately onto one cookie, and cover with another, making a small cookie sandwich. Repeat for remaining cookies and filling. Leave to cool in refrigerator or serve immediately.
