Description

This dessert is every bit as delicious as the campfire treat it’s named after!

Ingredients

  • FOR THE CRUST:
  • 2-½ cups Graham Crackers Crumbs, Plus Extra For Optional Garnish
  • ½ cups Sugar
  • ¾ cups Melted Butter
  • 1 cup Miniature Marshmallows
  • ½ cups Warmed Hot Fudge Ice Cream Topping, Plus Extra For Optional Garnish

  • FOR THE FILLING:
  • 16 ounces, weight Cream Cheese
  • 14 ounces, fluid Sweetened, Condensed Milk
  • 2 teaspoons Vanilla Extract
  • 3 whole Eggs
  • 1 cup Miniature Chocolate Chips
  • 1-½ cup Miniature Marshmallows, Divided Use

Preparation

Crust:

In a small bowl, combine cracker crumbs, sugar and melted butter. Stir until all combined. Pour into a 10-inch springform pan. Pat mixture up the sides and on the bottom of the pan. Sprinkle with 1 cup mini marshmallows then drizzle with fudge topping. Chill while preparing the cheesecake.

Filling:

Combine cream cheese and condensed milk in a mixer on low speed until smooth. Add vanilla. Add eggs, one at a time, until blended, but do not over mix. Stir in chocolate chips and 1 cup of marshmallows. Pour over crust and bake at 325 degrees F for 45 minutes or until almost set. Sprinkle with an additional ½ cup of mini marshmallows and return to oven for about 5 minutes or until marshmallows are golden brown and puffed.

Cool on wire rack for 10 minutes then run a knife around the edge of the pan to loosen. Chill overnight then remove sides of pan. Just before serving, break up pieces of graham cracker and stick in the top, and then drizzle with more warmed fudge topping.

Easy and delicious! I made it exactly as described for a family gathering, and it got rave reviews. As others have said, all the marshmallows that were mixed in with the filling rose up to the top while cooking. They got a bit too “toasty” looking (I just covered them with some more marshmallows that I only lightly browned, and then added graham crackers and chocolate sauce to cover the rest of the overly-toasty ones). This all turned out to be a matter of aesthetics, and didn’t effect the taste at all. I will definitely be making this again!

I messed up and it came out a bit wonky because of it. Whoops. It still tasted insanely good! Thanks for the recipe! Next time, I’ll pay more attention and I’m sure it’ll be incredible the way it was meant to be :D

this was absolutely delicious…. the only change i’m going to make next time is to leave out the layer of marshmallows / hot fudge sauce at the bottom of the cake. all it did was make the bottom crust candy-like, and i LOVE the crust the way it’s supposed to be. but other than that, this was a complete winner. i’ll be making this again, that’s for sure!

Made this for my husband for his birthday! It was DELICIOUS! The only change I made was that I didn’t add any marshmallows to the top at the end- for some reason all of the marshmallows I mixed in rose to the top of the cake and were nicely toasted by the end of the baking so I didn’t think it needed more. So tasty though and am regretting that I only got to eat one piece before hubby scarfed the rest down!
