Description

Every fall my mom would make these, and now I make them for my girls. So, preheat your oven and try your hand at some very delicious pumpkin cookies.

Ingredients

  • 2 cups Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Salt
  • 1 cup Shortening
  • 1 cup Sugar
  • 1 cup Pumpkin
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract

Preparation

Preheat the oven to 350 degrees.

Begin by sifting the first 5 ingredients together in a medium-sized mixing bowl; set aside. In a large mixing bowl cream the sugar and shortening, then add the pumpkin; blend well. Add the egg; beat well. Next, gently stir in the dry ingredients, a little at a time, to form a smooth batter. Finally, add the vanilla and stir to combine.

Drop by tablespoonfuls onto a cookie sheet and bake for around 12 minutes. Once cookies are done, cool for a few minutes on the cookie sheet, then transfer to wire racks to cool completely.

These cookies are fabulous though mine looked nothing like the picture. I had to use a mix of shortening and butter b/c I ran out of shortening and I did add dried cranberries to them at the end. They taste wonderful and I would surely make these again!

I made these cookies with butter instead of shortening. They are soooo soft, almost like little pumpkin cakes. Very easy too.

These cookies are delish! Make them a little smaller than you might a choc. chip. They really are like the top of a pumpkin muffin. I frosted mine with a dab of cinnamon buttercream frosting.

Cookies came out good… baking time for me was closer to 20 minutes.

These cookies are fabulous! The pumpkin flavor is great, and they are so soft – almost like muffin tops. The recipe is simple and easy to follow. I didn’t have shortening, so I used 1 cup of butter, and it seemed to work fine.

Not a fan of the recipe the way it is. Very bland, to my taste. Choc Chips or Butterscotch would have helped, but then that is a different recipe.

Tasty cookie but I think next time I will add some pumpkin pie spice for a stronger flavor.

These were excellent & very pumpkin-y! I had to use butter instead, but they turned out fantastic. I added some choc. chips too:) I will definitely make these again.

I think these are the perfect pumpkin cookie! I make them about once every couple of weeks all fall/winter long.
