Description

It doesn’t happen to me often but yesterday I just got the urge to bake something. I didn’t want to make it too unhealthy and so I came up with these really great cookies made with chickpeas, tahini and pea protein. I wanted a little bit extra and so I put some chopped up chocolate in there, too.

Ingredients

  • 1 can (14 Oz. Or 400g Size) Chickpeas, Drained And Washed
  • 2 Tablespoons Tahini
  • 2 Tablespoons Nut Milk
  • 2 Tablespoons Olive Oil (medium Or Mild)
  • 35.4 grams Powdered Agave
  • 5 Tablespoons Pea Protein
  • 2 Tablespoons Coconut Flour
  • ½ teaspoons Cinnamon
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt (or SoLow)
  • 49.6 grams Dark Chocolate, Roughly Chopped

Preparation

1. Preheat oven to 180ºC/350ºF/Gas Mark 4.

2. Place the chickpeas in a food processor with the tahini, milk and oil and blend until smooth.

3. Sieve the agave, pea protein, coconut flour, cinnamon, baking powder and salt into the food processor and pulse to combine.

4. Gently stir the chopped chocolate into the mix.

5. Divide the mix into 10 equal balls and then on a baking tray, lined with parchment paper, flatten all 10 balls into cookie shapes.

6. Bake cookies in the oven for 15-20 mins and then remove and leave to cool before transferring to a wire rack until they are completely cooled.
