Description

If you love pistachio pudding then you will love these Pistachio Pudding Rice Krispie Treats! Easy to make and deliciously addicting!

Ingredients

  • 3 Tablespoons Butter
  • 10 ounces, weight Mini Marshmallows
  • ¼ cups Instant Pistachio Pudding Mix
  • ½ teaspoons Almond Extract
  • 2 drops Green Food Coloring (optional)
  • 4 cups Rice Krispie Cereal
  • 2 ounces, weight Chopped Dark Chocolate (or Chocolate Chips)

Preparation

In a large pot melt the butter over medium-low heat. Once the butter is melted stir in the marshmallows until they have dissolved. When the marshmallow mixture is smooth remove pot from heat. Add in the pistachio pudding mix, almond extract, and food coloring, mixing it until it is incorporated.

Add in the Rice Krispies and fold them in until they are completely coated in the marshmallow mixture.

Pour the Rice Krispies mixture into an 8×8 baking pan that you’ve sprayed with cooking spray. Press the Rice Krispies down into the pan with greased hands.

Melt the dark chocolate in the microwave (for 30 seconds at a time, stirring between additional 30 second increments) or in the top of a double boiler (with simmering water in the bottom).

Drizzle the melted chocolate over the Rice Krispie treats. Let the chocolate harden before cutting them into bars.

Notes: Store the bars in an airtight container to prevent them from drying out.

Excellent, easy St. Patrick’s Day dessert. My family ate the entire pan. I loved the addition of the pistachio pudding.
