Description

A light and fluffy pink cookie that’s chock full of mini chocolate chips.

Ingredients

  • 1-¼ cup Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ cups Butter, Unsalted, Room Temperature
  • ½ cups Sugar
  • 1 whole Egg
  • ½ teaspoons Vanilla Extract
  • 1-½ teaspoon Fuschia Pink Food Coloring Or 4 Drops Red Food Coloring
  • ½ cups Mini Chocolate Chips

Preparation

Preheat oven to 350 F. Line two baking sheets with parchment paper or Silpat mats; set aside.

In a bowl, add flour, baking soda and salt. Mix well and set aside.

In a large bowl using an electric mixer, beat butter and sugar until light and fluffy. Add egg and vanilla extract and beat until combined. Add food coloring and beat until combined.

Slowly beat in the flour mixture, just until incorporated. While mixing the flour, you can add a drop or two of additional food coloring, if desired. Fold in chocolate chips

Drop about teaspoon size scoops of batter onto prepared cookie sheets, about 2″ apart.

Bake in the oven for 8-10 minutes or until bottoms of cookies lightly brown. Remove pans from oven. Let the cookies rest on baking sheets for two minutes, then remove them and let them cool completely on a cooling rack.
